Slow-cooker Beef and Garden Vegetable Soup "American Test Kitchen"
It does not get much easier than this 7 Can Crock Pot Vegetable Soup recipe. It is not only easy, but absolutely delicious! The flavor is wonderful!

As you may already know, I am in the running for the title of World's Slowest Recipe Prepper (is prepper a word? lol). So, when I hear of a recipe that is super easy to prep, I am all for it! You can actually thank Michael for this yummy recipe. Before we met, he said he made this 7 Can Crock Pot Vegetable Soup all the time. My only complaint is that it took him almost eleven years to tell me about it! Come on man! You gotta share a jewel of a recipe when you have one!
If you want to take the cooking time of this recipe down even more, you can use our Crock Pot Make Ahead Ground Beef. While you are going about your day, your crock pot will meld all those flavors together to give you a delicious, hearty soup for dinner!
What You Will Need
Ingredients Needed
- 2 lbs ground beef, browned and drained
- 64 oz vegetable juice
- 14.5 oz can beef broth
- 15.25 oz can corn, drained
- 14.5 oz can green beans, drained
- 15 oz can peas, drained
- 14.5 oz can carrots, drained
- 15 oz can sliced potatoes, drained
- 14.5 oz can diced tomatoes, drained
- 1 small onion, chopped
- 1 tablespoon dried basil
- 1 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Equipment Needed
- Skillet and strainer or micro cooker
- Can opener
- Can strainer (optional)
- Measuring spoons
- Wooden spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high
